Sorry for my absense

Post by SuzySparkles on Mon Feb 11, 2013 9:10 am

Sorry guys!! I will try to be more vigilant on here and keep things in order... As many of you know my friend was in the hospital in a coma for months... Well they withdrew support and it was pretty hard. Also I am getting married in like a month and a half and I have SOOOOOOOO much to do.... we are doing the whole DIY wedding. (which btw... Magna from the forum is a whiz on alll things wedding) She gave me so many ideas Smile

::sigh:: I wish I had a time machine and it was all done with the way I am feeling today!! How does one figure how much food you need per person with taking into consideration appetizers and desserts... and how many pork shoulder thingys do you need to make pulled pork for like 50 people.... and and and?!?!?! AHHHHHHHHHHHHHHHHHH!!!!

Anyhow!! I will be more active Smile

::kisses::

I really need food help...lol

I am trying to keep it cheap... there will be aboutttt 60 guests..

I am set on 3 appetizers:

Individual mini taco dips
Individual cups of ranch with veggies
Fruit Skewers

Then for dinner we are doing buffet style

There will be a taco bar
a mashed potato bar

Then I want pulled pork in one warmer with buns and a vegetable in the other.

SO... How many pork (shoulder, butt, whatever it is called's) do I need to make pulled pork sandwiches... (I am guessing 1 per person with all of the other stuff available)

Then there will be cupcakes and a candy bar at the wedding as well Smile

I'm very sorry to hear that, my condolences.

On the brighter side, congratulations on your wedding! Just a suggestion...ask the butcher in a supermarket how much meat to buy...they always know their stuff!!

According to my research, you need about 4-6 ounces of cooked meat per guest. Some people choose no bun, so they will eat a bit more.

A roast of 4 pounds will feed about 10, so you will need six times that. You are looking at 24-30 pounds of pork.

I usually buy my pork from Sam's, where you can get it a little cheaper.

Hold the phone. That's not counting for shrinkage and waste. According to this thread: http://www.smoked-meat.com/forum/showthread.php?t=19616, you will need more like 45 pounds to make enough.
This thread is for 30-40 firefighters, but I'm figuring your people won't be as hearty eaters, plus you have other options.

If you yield 50% of meat per pound, and you have 60 people...
60 people, times 6 ounces per person, equals 360 ounces. Divide that by 8 ounces of yield (50%), and you need 45 pounds.

45lbs sounds about right to me. I had a roast dinner for 28 last month and we went through about 22lbs of beef! (22lbs uncooked weight). There was ham too, but not much of that got eaten.

Congrats Suzy! ... and condolences at the same time. Deep breaths huh? It's a busy time, make sure you take care of you. We'll all be here when things settle down Very Happy

Sorry to hear about your friend. That is........I have no words.

Congrats on the wedding.

We did a candy bar for our son's 16th, and I did the one for my brothers wedding. I will dig deep into my emails and see if I can't find the candy companies I searched out to use.

Praying for you Suzy. I still miss my friend I lost a few years ago....

I know nothing about wedding prep since my hubby & I gave our families a months notice (LOL)... Remember, when it all comes down to it, it's about the 2 of you & your future. The wedding will not be perfect & that's ok. It will be awesome because you love each other & are planning a future together...

I have 3 daughters & dread the wedding prep affraid

I was sure I'd put a message in here, but I can't see it so I must be having a junior-senior moment. Ahem.

I'm so sorry about your friend, Suzy. Wishing you and your friend's family some comfort and peace. So sad.

And in contrast (isn't life always that way??) to that....huge, huge congratulations on your upcoming wedding! If you're doing pulled pork, can I gatecrash? Very Happy Seriously though, relax and have a wonderful time. Make sure it's fun, personal and utterly focused on you and your new husband.

Welcome back!
